The grapes, de-stemmed and crushed, pass directly into the stainless steel fermentation tanks, with two daily racking for 5-8 days. The skins are then separated and fermentation finishes.
This wine is partly created using carbonic maceration; whole bunches, virtually intact, spend 7-8 days in tanks in an inert atmosphere, after which they are pressed and alcoholic fermentation is complete.
