Winemaking Method:
Harvest is carried out by hand at the end of July and the beginning of August and the grapes are transferred to the winery in 20kg crates. A selection process takes place when they are harvested, on reception and on the de-stemming belt.
Full de-stemming is carried out without crushing, followed by brief skin maceration. A membrane press is used at low pressure. The wine is decanted in isothermal tanks for 24 hours and alcoholic fermentation takes place in stainless steel tanks at a controlled temperature of 16-18ºC. Fermentation is delayed by keeping it cold at 5ºC when the residual sugars reach around 25g/l. It is kept cold, in isothermal tanks, until dispatch, when it is adjusted using Malvasía Seco (dry) so the sugar content exactly matches the amount stated on the label. Then it is clarified, filtered and bottled.

To create a wine that reaches its maximum aromatic potential using the grape's natural sugars - an expression of the unique characteristics of the cultivation conditions on Lanzarote.
Wine-tasting Characteristics:
Appearance: Straw-yellow with a golden hue.
Nose: An intense varietal wine offering a fresh ensemble of mature fruit, honey and herbaceous tones.
Palate: Pleasant on the tongue, smooth, fresh, with good acidity to balance the sweetness. Broad and extremely fruity.
Pairing with Food:
Seafood, fish - baked or in a sauce and semi-cured cheese.
