CARD: SWEET MALVASIA

CLASSIFICATION
Naturally sweet White wine. Appellation Lanzarote.

100 %Malvasía.

WINEMAKING METHOD
Harvest is carried out by hand to the winery in 20kg crates, selecting very ripe clusters of grapes (potentially 15º). After destemming and crushing, the grapes are chilled to 12 ºC and subject to a short pelicular maceration (2-3 hours). Then the must is pressed and decanted.
Fermentation is interrupted (chilling to 5 ºC and centrifuging) when residual sugars descend to 80 g/l. After clarification, the wine is filtered and bottled.

BASIC PRINCIPLES
Achieve a naturally sweet Malvasia (withour adding alcohol and using only naturally occurring sugars) enhancing its unique characteristics.

WINE-TASTING CHARACTERISTICS
Appearance Straw-yellow with yellow highlights. Clear and extremely glossy.
Nose Fruity and reminiscent of well-matured grapes, white flowers and fresh herbaceous tones. Subtle and elegant.
Palate Well-balanced, with sufficient sweetness and ample acidity. Smooth, fresh and silky, attractive and cheerful aromas, reminiscent of white flowers and spearmint.

FOOD PAIRING
Serve chilled, as an aperitif, with fresh foie-gras. Chilled sweet desserts and ice creams. Excellent with fresh cheese and quince jelly.
