Winemaking Method:
Harvest is carried out by hand in the second half of August, selecting bunches that show signs of over-maturation and transferring them to the winery in 20kg crates. Full de-stemming is carried out without crushing, followed by brief skin maceration. A membrane press is used at low pressure.
The wine is decanted in isothermal tanks for 24 hours. Alcoholic fermentation takes place in stainless steel tanks at a controlled temperature of 15-17ºC. Fermentation is delayed by keeping it cold at 5ºC, at a density of 1 035-1 040, equivalent to 90-100g/l of natural sugars. It is kept cold in isothermal tanks until dispatch, when it is clarified, filtered and bottled, in small measures to maintain its freshness.

To create a wine that reaches its maximum aromatic potential, an expression of the unique characteristics of this variety. Made exclusively with the natural sugars from our grapes.
Wine-tasting Characteristics:
Appearance: Straw-yellow, with greenish glints. Clear and extremely glossy.
Nose: Fruity and reminiscent of well-matured grapes, white flowers and fresh herbaceous tones. Subtle and elegant.
Palate: Well-balanced, with sufficient sweetness and ample acidity. Smooth, fresh and silky, attractive and cheerful aromas redolent of white flowers and mint.
Pairing with Food:
Serve chilled, as an aperitif, with fresh foie-gras. Chilled sweet desserts and ice creams. Excellent with fresh cheese and quince jelly.
Cultural:
The label depicts the inscription found on the foundation stone of the winery, carved in 1775.
