BASIC PRINCIPLES

Producing a Malvasia wine with mature lees, permitting the maximum expression of the Malvasia.

WINEMAKING METHOD

Using only grapes from the El Grifo Estate. Once destemmed and crushed, they are chilled to 12 ºC, achieving a must by means of draining before pressing This must, once decanted, begins fermentation.

Once in-cask fermentation has completed, the fine lees are stirred for four months to attain higher complexity and volume.

WINE-TASTING CHARACTERISTICS

  • Appearance: Yellow with greenish glints. Clean and brilliant.
  • Nose: Mineral hints preceded by the fruitiness and sweetness of the Malvasia,
  • Palate: Oily and fresh volume. With a very persistent after-taste of fruit and minerals.
